Lucy’s Slow Cooker Lebanese Lentil Soup
Prep Time 10 mins, Cook Time 4 hrs, Total Time – 4 hrs 10 mins
Ingredients
- 6 Yukon Gold potatoes
- 1 cup red lentils
- 1 medium onion diced
- 2 medium carrots diced
- 2 stalks celery diced
- 8 cups chicken or vegetable broth
- 1/4 cup lemon juice
- 1 tablespoon cumin
- 1 teaspoon turmeric
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/4 teaspoon cayenne
- plain yogurt to serve
Directions
- Place all of the ingredients (minus the yogurt) in a slow cooker. Heat on low for 8 hours or High for 4 hours.
- Before serving, puree soup until smooth and creamy. Check for seasoning and adjust accordingly before serving.
