Lucy’s Baked Yams with Cajun Spice
Ingredients
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 2 ½ teaspoons paprika
- 1 teaspoon ground black pepper
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 ¼ teaspoons dried oregano
- 1 ¼ teaspoons dried thyme
- ½ teaspoon red pepper flakes (optional)
Directions
Peel and cut yams into cubes and place in a bowl. Add enough coconut or avocado oil to coat. Add Cajun Spice and minced garlic according to taste. Mix well. Spread cubes out on a cookie sheet. Bake at 400 F for 55 – 60 minutes, turning halfway through cooking time.
