Lucy’s Red Cabbage Salad
Ingredients for the dressing:
- 5 tbsp. dried cranberries
- 1 1/2 tsp. spicy brown mustard
- 1/3 cup olive oil
- 1/3 tsp. salt
- 1/8 tsp. black pepper
- 3 tbsp. vinegar (white, ACV or any type you prefer)
- 3 tbsp. water
- 3 tbsp. tomato paste
- 2 – 3 garlic cloves chopped
Mix all ingredients together and allow to marinate for a minimum of 2 hours.
Ingredients for the salad:
- 1 red onion, shredded
- 1 head red cabbage, shredded
- 4-5 carrots, shredded
- 1 red bell pepper, finely chopped
- 1 yellow bell pepper, finely chopped
- 1 bunch scallions, finely chopped
- 2 cucumbers, finely chopped
Directions
Mix the dressing into the salad right before serving.
